\ \
\ INGREDIENTS\
\ (for 8 persons)\
\ \
\ - 8 heatproof ceramic or glass cups\
\ - 8 egg yolks\
\ - 100g sugar\
\ - 475g cream\
\ - fresh vanilla and cinnamon sticks\
\ - 4g sugar\
\ \
\ PREPARATION \

\ Preheat oven at 160 degrees Celcius\
\ Mix yolks and sugar.\
\ Heat cream until almost simmering.\
\ Cut open vanilla and cinnamon sticks and put into simmering cream.\
\ Temper and mix cream with yolks and sugar.\
\ Strain.\
\ Mix gently and pour into cups.\
\ Bake at 160 degrees Celcius for 0,75 hour in water bath. (Remove from heat source when cream has almost stiffened.)\
\ Refrigerate for at least 1 hour.\
\ Cover top of the cream with sugar and caramelize with fire torch.
