Oorspronkelijk zijn deze recepten gemaakt in ons studentenhuis. Omdat het een handige overzicht is is heb ik besloten later nog enkele eigen recepten toe te voegen.

Crème brulée for engineers

(Since the common language in engineering is English this recipe will be explained accordingly. An English-Dutch polytechnical dictionary is available in quality bookstores)

My friend MSc. Pim v. G. sent me this failproof recipe.

INGREDIENTS
(for 8 persons)

- 8 heatproof ceramic or glass cups
- 8 egg yolks
- 100g sugar
- 475g cream
- fresh vanilla and cinnamon sticks
- 4g sugar

PREPARATION

Preheat oven at 160 degrees Celcius
Mix yolks and sugar.
Heat cream until almost simmering.
Cut open vanilla and cinnamon sticks and put into simmering cream.
Temper and mix cream with yolks and sugar.
Strain.
Mix gently and pour into cups.
Bake at 160 degrees Celcius for 0,75 hour in water bath. (Remove from heat source when cream has almost stiffened.)
Refrigerate for at least 1 hour.
Cover top of the cream with sugar and caramelize with fire torch.
